Roasted Peanut Chicken Recipe

4 lbs chicken pieces with bone
1 packet Peanut Sauce Mix, both inner envelopes
1-13.5 oz can Coconut Milk
2 tablespoons flour
Methods:
1. Preheat oven to 350°F (175°C).
2. In an oven proof casserole dish, arrange chicken pieces.
3. In a small bowl, stir Peanut Sauce Mix into Coconut Milk.
4. Pour over chicken.
5. Bake uncovered until chicken is cooked through, about 45-60 minutes, basting 3-4 times.
6. Remove from oven when done. Put chicken on serving platter, keep warm.
7. Place dish with remaining sauce over medium high heat on stovetop.
8. Stir in flour a little at a time until sauce becomes desired consistency.
9. Serve over chicken.
10. Serve with Jasmine Rice.
