Red Curry Scalloped Sweet Potatoes Recipe

2 tablespoons peanut oil
6 cloves garlic, chopped
1 packet Red Curry Paste
2 large onions, sliced
2 cans Coconut Milk
3 teaspoon sugar
1 teaspoon salt
1/2 teaspoon allspice
1/4 cup chopped fresh basil
4 large sweet potatoes, sliced 1/4″ thick
Methods:
1.In a large heavy saucepan,heat peanut oil over medium heat.
2. Add garlic and Red Curry Paste.Cook until bubbly,about 30 seconds.
3. Add onions and sauté until soft,about 3 minutes.
4. Add Coconut Milk,sugar,salt and allspice.Bring to a boil.
5. Add sweet potatoes. Reduce heat to medium low.Simmer until potatoes are just tender, 20-25 minutes. Do not overcook.
6. Stir in fresh basil.
7. Preheat broiler.
8. Using a slotted spoon,carefully remove potatoes from pan to an oven proof casserole dish.
9. Pour desired amount of sauce over top.
10. Broil until bubbly,about 1 minute.
11. Serve hot.
