Pork and Broccoli in Orange Peanut Sauce Recipe

1/2 box (8 oz) Rice Noodles, any width
1 packet Peanut Sauce Mix, both inner envelopes
1 cup orange juice
1 teaspoon grated orange rind
1 lb broccoli florets
2 tablespoons vegetable oil
1 large red onion, cut into thin crescents
1 tablespoon grated ginger root
1 1/2 lbs pork loin, sliced thinly
2 tablespoons soy sauce
Methods:
1. Soak Rice Noodles according to package for sauté.
2. In a medium saucepan, add Peanut Sauce Mix, orange juice and orange rind. Bring to a boil. While stirring, boil gently for 5 minutes or until slightly reduced and thickened.
3. Blanch broccoli in salted water for 3 minutes. Drain. Shock in cold water to stop cooking action. Drain. Set aside.
4. In a large skillet or wok, heat oil over medium heat. Add onion. Stir fry 2 – 3 minutes.
5. Add ginger root, pork loin and soy sauce. Stir fry until pork is almost cooked through.
6. Add orange/peanut sauce. Mix together well and continue to cook for 1 minute.
7. Add drained noodles to skillet, mixing well. Toss and stir noodles with vegetables and meat until well incorporated and noodles are firm yet tender.
8. Pour onto a serving platter.
