Clams Stir-Fried with Roasted Chile Paste

Ingredients:

1 pound fresh clams, cleaned well
2 tablespoon roasted chili paste
3 to 4 fresh chillies, cut into long strips
2 teaspoons garlic, finely chopped
1 tablespoon fish sauce
1 teaspoon sugar
3 tablespoon vegetable oil
½ cup sweet basil leaves

Methods:

In a frying pan, heat the oil. Sauté garlic in the hot oil until it becomes golden. Add clams and stir until they are cooked. Season with fish sauce, sugar, and roasted chili paste. Before removing from heat, sprinkle with sweet basil leaves and red fresh chili. Stir-fry for another 5 seconds. Remove.
